Chef Rick Tramonto and Pastry Chef Gale Gand do their cutting-edge cuisine at Tru. But via their new restaurant company Cenitare, they're expanding to the 'burbs and beyond. Their latest project is a four-restaurant complex in the new Westin Hotel in Wheeling, featuring Osteria di Tramonto (Italian), Gale’s Coffee Bar, Tramonto's Steak & Seafood, and RT Lounge (small plates of oysters, sushi, etc.).
The restaurant company plans to expand these concepts to other Chicago locations and national markets including Las Vegas, Washington D.C., New York City, Miami and Scottsdale.
Cenitare is capitalized through Peter Dumon of The Harp Group and David Bossy and Mike Firsel of Mid-America Development. It focuses on high-concept restaurants, enlisting Tramonto and Gand, vets of Trio, Brasserie T and the four-start Tru.
